Roasted Delicata Squash Fries

These roasted Delicata Squash Fries bake up in the oven for a delicious side dish! This recipe is easy to do, healthy and flavourful!

I am a sucker for all types of squash and something just happens to it when its roasted that makes it absolutely irresistible! It really is an amazing thing.

Delicata squash has become a new squash variety in our home. I hadn’t heard of it or seen it before this past year and it has been so much fun experimenting with it and creating new fun ways to incorporate it into our recipes.

Seriously, of all the ways we have used it, these Roasted Delicata Squash Fries are my new favourite thing! The skin on delicata squash is edible, making it an easy recipe and one heck of a tasty snack! Serve with your favourite dip and snack away guilt free!

I mean, seriously, this recipe can’t get any easier! Just a handful of ingredients stand between you and this fun snack or side!

How to make Roasted Delicata Squash Fries

To make this recipe, you will need:

  • 2 delicata squash
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • salt and pepper

Preheat oven to 450F and line 2 baking sheets with parchment paper.

Cut squash in half lengthwise and spoon on the seeds. Slice the squash into 1/4 inch wedges and arrange on baking trays.

Drizzle with olive oil and sprinkle with onion powder, salt and pepper. Roast in the oven until tender, approximately 25 minutes.
