These Roasted Delicata Squash Fries bake up in the oven for a delicious side dish! This recipe is easy to do, healthy and flavorful!
I am a sucker for all types of squash and something just happens to it when its roasted that makes it absolutely irresistible.
Delicata squash has become a new squash variety in our home. I hadn’t heard of it or seen it before this past year and it has been so much fun experimenting with it and creating new fun ways to incorporate it into our recipes.
Of all the ways we have used it, these Roasted Delicata Squash Fries are my new favorite thing. While they aren’t exactly crispy like a traditional fry, these squash fries are still a fun snack and perfect for dipping. I love serving this up with a tasty dip like a sriracha mayo or Tzatziki Sauce and snacking away guilt free.
You can also toss them into salads like I did in my Kale Caesar Salad with Roasted Delicata Squash.
Bonus: since the skin on delicata squash is edible, these fries are so easy to whip up. Just a handful of ingredients stand between you and this fun snack or side.

Ingredients for Roasted Delicata Squash Fries
- Delicata squash: I use 2 delicata squash since they are quite small compared to other squash varieties.
- Olive oil
- Seasoning: Onion powder, salt, and black pepper. I keep the seasoning simple since I love to dunk them in a flavorful dip but you can easily play around with seasonings to make these to your liking. You can add heat through a bit of cayenne pepper, play around with dried herbs like dill or oregano, or use seasoning mixes like lemon pepper, etc.

How to make Roasted Delicata Squash Fries
- Prep. Preheat oven to 450F and line 2 baking sheets with parchment paper.
- Slice the squash. Cut squash in half lengthwise and spoon on the seeds. Slice the squash into 1/4 inch wedges and arrange on baking trays.
- Season and roast. Drizzle with olive oil and sprinkle with onion powder, salt and pepper. Roast in the oven until tender, approximately 25 minutes.
Storing leftovers and reheating
Once cooled, leftovers can be stored in an airtight container in the fridge.
To reheat them, you can pop them on a baking sheet and heat them in the oven at 350F until heated through. Alternatively, you can heat them in a skillet with a bit of oil. While the squash fries aren’t crisp to begin with, they will become more tender when you reheat them.
Alternatively, you can toss the leftover squash into your lunch salad without reheating it, if you wish.
