There is nothing more refreshing on a warm day than a delicious iced coffee drink to start off the day or give that much needed afternoon pick-me-up. Greek Frappe, Caramel Frappuccino, and this Iced Vanilla Latte always hits the spot and is on regular rotation in our home when the weather warms up.
We’ve been obsessed with Iced Vanilla Lattes lately. What’s not to love about these creamy, perfectly sweetened drinks? They are refreshing, made extra tasty with homemade vanilla syrup, and deliver that little caffeine fix we need to tackle the day.

What we love just as much? They cost just a fraction of the price to make them at home than they do at the coffee shop.
If you haven’t tried making your own iced vanilla latte at home, I am here to tell you that it is way easier than you think. You don’t need any fancy equipment either. While an espresso machine helps, strong brewed coffee does the job.
We especially love using strong brewed coffee in our iced lattes because we can have it ready and cooled ahead of time. We brew a big pot of strong coffee, let it cool, and then keep it in the fridge for a quick iced latte anytime we want.

Ingredients for Iced Vanilla Latte
- Sugar: granulated sugar is used to make the vanilla simple syrup.
- Vanilla extract: The vanilla flavor in this vanilla latte.
- Ice: About a cup of ice cubes keeps your coffee cool and refreshing.
- Coffee: 2 shots of espresso gives you a classic latte flavor. If you don’t have an espresso maker at home, strong brewed coffee can be used instead. If you are using strong-brewed coffee, you may need to play around with the ratio of coffee to milk depending on how strong your coffee is brewed.
- Milk: Similar to your options at a coffee shop, you can substitute pretty much any type of milk you like to make your coffee. Whole milk is ideal but 2%, skim, and even plant based milks can be used.

How to make Iced Vanilla Latte
1. Make vanilla syrup. In a small saucepan over medium heat, add all of the syrup ingredients except the vanilla extract. Simmer together for 5-7 minutes, whisking often. Remove from heat and whisk in the vanilla. Let it cool.

2. Pour coffee over ice. Place the ice in a tall glass. Pour in the espresso or strong-brewed coffee.

3. Mix milk and syrup. Add 2 tablespoons of vanilla simple syrup* and the milk to a mason jar with a secure lid or a cocktail shaker. Shake for a minute. Pour the milk over the iced coffee. Enjoy.

Can you prep this latte in advance?
Yes and no. While it’s best to create your iced latte when you want to drink it, you can definitely do some major prep ahead of time. The vanilla simple syrup can be made ahead of time, cooled, and then stored in the fridge.
In addition, if you are using strong brewed coffee instead of espresso, you can also make this ahead of time. Simply brew a strong pot of coffee as you normally would, let it cool, and then pop it in the fridge. It should keep for a few days.
With most of the prep work done, making a latte in the morning is a breeze.

Iced Vanilla Latte
Ingredients
For the Vanilla Simple Syrup (makes enough for 4 lattes):
- 1/2 cup water
- 1/2 cup white granulated sugar
- 1/2 teaspoon vanilla extract
To make an iced vanilla latte:
- 1 cup ice
- 1/2 cup strong-brewed coffee or 2 shots espresso*
- 2 tablespoons vanilla simple syrup*
- 3/4 cup milk*
Instructions

To make one iced latte:
- Place the ice in a tall glass. Pour in the espresso or strong-brewed coffee.
- Add 2 tablespoons of vanilla simple syrup* and the milk to a mason jar with a secure lid or a cocktail shaker [Note: If you opt to use strong brewed coffee instead of espresso, you may need to reduce the amount of milk you use, depending on the strength of your brew. I recommend you start by using less than the amount listed in the recipe and then add more if needed.]
- Shake for a minute. Pour the frothed milk over the iced coffee. Enjoy.
