Who doesn’t love tacos? I love them so much I eat them for breakfast! These simple, healthy breakfast tacos are packed with eggs, fresh veggies and herbs and sprinkled with feta! As a Mediterranean girl, I add feta cheese on everything! So its no surprise its a part of our breakfast table too.
Fresh flavours from veggies and herbs are a wonderful addition to soft, scrambled eggs. The feta adds a nice salty, cheese element that makes them extra yummy. Wrap it all up in a tortilla, and you have a delicious and healthy breakfast that is also fun to eat!
Oh and it comes together in just minutes. Let’s face it, mornings call for easy breakfasts but that doesn’t mean they can’t be delicious!
Ingredients in Mediterranean Breakfast Tacos
- Tortillas corn or flour
- Eggs
- Olive oil
- Spinach
- Cherry tomatoes
- Feta
- Fresh basil
- salt and pepper
How to make Mediterranean Breakfast Tacos
- Heat olive oil in a pan on medium heat. Whisk the eggs in a bowl and place in hot pan. Stir until they are cooked to your liking. Salt and pepper to taste.
- Add spinach to the tortillas and top with the scrambled eggs. Add the tomatoes, feta and basil.
Variations for dietary restrictions
This breakfast is pretty healthy and loaded with nutrients as it is. If you make it with corn tortillas, they are also naturally gluten-free (just be sure that your corn tortillas are gluten-free)! This is perfect if you have this type of dietary restriction.
If you are on a low-carb diet, you can substitute keto tortillas or just forgo the wrap and enjoy a Mediterranean style scrambled eggs!
