Cherry Tomato Caprese Salad

A light and fresh salad that is full of flavour! This Cherry Tomato Caprese Salad uses cherry tomatoes, Bocconcini cheese and basil to make a bright, healthy salad!

Caprese salad is easily one of my favourite salads! Its simplicity is obvious but its flavours- oh its flavours! Maybe its my love of fresh herbs like basil. Or my obsession with tomatoes. And then there’s cheese! *sigh* I suppose it isn’t all that surprising that I’m obsessed with this salad!

I love this salad year round. While full tomatoes aren’t always great year round, I find cherry tomatoes are delicious no matter the season and so I tend to make cherry tomato Caprese salad more often when I can’t get my hands on juicy big tomatoes. Or when my summer garden is exploding with more cherry tomatoes than I know what to do with!

Assembling the perfect Caprese Salad

In addition to tomatoes, basil and cheese, a good Caprese salad is made with quality olive oil. Not the cheap stuff. Invest in a good olive oil for instances like this as the flavour truly is better! I season the salad simply with salt and pepper and then drizzle it with balsamic glaze.

You can make your own balsamic glaze at home by reducing 2 cups of balsamic vinegar with 1/2 cup of brown sugar. You simply heat it on the stove at a low temperature until the vinegar dissolves substantially and you are left with a thickened sauce. It should coat the back of a spoon- that’s when you know its ready! And super delicious!

You can also find balsamic glazes in most grocery stores. I love having a bottle on hand so I can drizzle it on whenever the idea strikes! In addition to salads like this one I love to drizzle it on pizza too! Oh, and cheese and crackers. It is so good!

Ingredients
  

  • 4 cups cherry tomatoes halved
  • 1 cup Bocconcini cheese halved
  • 2 tablespoons olive oil
  • 10 basil leaves for garnish
  • 1 tablespoons balsamic glaze (store bought or homemade)
  • salt and pepper to taste

Instructions
 

  • In a bowl, toss tomatoes and bocconcini with olive oil to coat evenly and add salt and pepper to taste.
  • Place tomatoes into serving dish. Add the basil leaves. Drizzle with balsamic glaze. Serve.
