Orange Pomegranate Salad with Citrus Poppy Seed Dressing has become one of my favorite salads to make lately. This fresh tasting, citrusy salad is packed with nutrient-rich ingredients that are so delicious and refreshing. The salad tastes bright and light.

I’ve said it before and I’ll say it again- I am a sucker for a salad loaded with toppings! And this salad delivers in the toppings department. Orange segments, pomegranate arils, and a nice crunch (and protein) from almond slivers.

This salad couldn’t be easier to make either! In addition to the easy to find ingredients, this salad is pretty simple to put together and that includes the simple homemade dressing!

Making the Orange Pomegranate Salad

  1. Prep the ingredients. Begin by washing and preparing all of your salad ingredients so they are ready for assembly.

  2. Make the dressing. Place all the salad dressing ingredients into a jar with a secure lid and shake until they are well combined. Taste and adjust seasoning as needed.

  3. Assemble the salad. Reserve some orange segments and set them aside. Place the salad greens, the remaining orange segments, almond slices and pomegranate seeds in a large bowl and drizzle with the salad dressing. Top with the reserved orange segments and serve.

Prepping the salad in advance

While you cannot dress the salad in advance (the salad greens will wilt and become limp and soggy), you can certainly prep everything you need in advance.

To prep this salad in advance for our dinner, I like to make the salad dressing and then store it in the fridge in a mason jar with a secure lid. Then I place all of the salad ingredients in a serving bowl (undressed) and cover the bowl with plastic food wrap. I then place it in the fridge as well.

When you are ready to serve dinner, you just need to dress the salad, toss it all together and serve.

What to serve with this salad

This Orange Pomegranate Salad with Citrus Poppy Seed Dressing pairs well with most main dishes. You can serve it with a delicate white fish or a heavier pot roast and it works well in each scenario. You can also eat it as a light lunch.

Some of my favorite dishes to serve with this include my Panko Crusted Fish, Almond Crusted Salmon, Baked Breaded Pork Chops, or Crispy Chicken Cutlets. Another great option is my Slow Cooker Chicken and Potatoes which means if you prep the salad in advance, you can have a complete dinner on the table within minutes.

I hope you enjoy this recipe!
