Almond Crusted Salmon is an easy, flavourful recipe that bakes up in the oven and is ready in just 20 minutes! This low-carb, healthy salmon recipe is grain-free and can be made keto too!
Of all of the ways to prepare salmon, coating it in a delicious crust has to be one of the best! The crunchy crust in this recipe is comprised of roasted almonds and fresh herbs and boy does it do wonders to elevate a simple salmon fillet! No boring salmon here, folks.
The crunchy almond crust adds a nice contrast to the tender salmon. Its adhered to the salmon with a honey-Dijon mustard which not only helps the crust “stick”, but it adds lovely flavour to the dish too. I’m honestly drooling just thinking about it again.
Not only is Almond Crusted Salmon incredibly delicious, it is also easy to make in just 20 minutes! This makes it a perfect option for busy weeknights! Truly though, this salmon isn’t just for busy weeknights, it is impressive enough to serve up at your next dinner party. Shhh, no need to tell your dinner guests that this recipe is so easy a novice cook can master it!
And did I mention that this recipe is gluten-free, low carb and healthy too? If you are on a keto diet, you can omit the honey in the recipe (or replace it with a keto sweetener instead).
Ingredients needed for Almond Crusted Salmon
To make this recipe, you will need:
- salmon fillets
- salt and pepper
- roasted almonds
- fresh parsley
- Dijon mustard
- honey (omit if on a keto diet)
- lemon, for serving
How to make Almond Crusted Salmon
- Season the salmon: Pat salmon dry and season with salt and pepper. Place on the baking dish.
- Prep the almond crust: Using the small bowl attachment of your food processor, add the almonds and parsley. Pulse to create a coarse meal. (If you do not have a food processor, chop the almonds and parsley finely).
- Coat the salmon in honey mustard: In a bowl, whisk together the Dijon mustard and honey. Spoon the mixture onto the salmon fillets.
- Dip salmon in the almond crust: Place the almond crust mixture onto a shallow plate and dip the salmon in it (the side with the honey Dijon mixture) so that it sticks to the fish. Place the salmon back onto the baking dish with the crust side up.
- Bake: Bake in a preheated oven at 450F for 10-15 minutes* or until salmon is cooked through (the cook time will vary depending on the thickness of the salmon fillets).

Storing leftovers and reheating
Leftover salmon fillets can be placed in airtight container and stored in the fridge for a few days. To reheat, place the salmon on a parchment lined baking sheet and pop it back in the oven at 350F until it is heated through. You can heat it up in an air fryer too!
What to serve with this recipe:
I love to serve this salmon with rice and a fresh salad like my Radish Cucumber Salad, Green Bean Salad with Lemon Herb Vinaigrette, Mediterranean Grain Salad with Roasted Summer Vegetables, or my Cucumber Feta Salad.
Veggie side dishes also go really well with salmon. For instance, we sometimes serve this recipe up with Roasted Sugar Snap Peas, Sauteed Swiss Chard, Maple Roasted Sweet Potatoes, or Roasted Asparagus.
Other great side dish options include Baked Green Bean Fries, Mediterranean Couscous Salad, or Crispy Air Fryer Greek Potatoes.

This was super tasty! Easy to follow with minimal ingredients and really came together quickly! Subbed in spicy brown mustard for the dijon but it was a great flavor similar to honey mustard and the crunch of the almonds with the flakiness of the fish was a satisfying texture. Will be making again for sure!
Can this be air fried? I can tell this is yummy.
Yes, you can air fry them. I am not sure about timing though as I haven’t tested it out with this recipe.
