Salmon is a favourite in our house. We eat it often, at least once every 2 weeks minimum and this particular recipe is one of our favorites! Part of the reason is it is so dang delicious – I mean, how can you go wrong with with delicious herby buttery flavors?
The other reason I love this recipe is because of its simplicity and speedy cook time! Heck yes to a quick dinner recipe!
I love a good foil packet dinner! The salmon gets all wrapped up in foil in this recipe and bakes in the oven. This locks in moisture, making the fish so tender and wonderful! It also helps with an easy clean up! Win- win!

Ingredients in Baked Herb Butter Salmon
- Salmon fillet: I use a large 1 1/2 pound salmon fillet.
- Butter: melted. You can use salted or unsalted butter.
- Herbs: Fresh oregano, parsley, and thyme. If you opt to use dried herbs instead, you will need to use 1/3 of the amount listed in the recipe when substituting for fresh.
- Lemon: Freshly squeezed lemon juice adds brightness to the salmon. I also like to serve the fish with lemon slices so that additional lemon can be squeezed on if desired.
- Seasoning: salt and pepper.

How to Bake Salmon
- Prep. Preheat oven 375F. Line a baking sheet with foil big enough to fold over fish.
- Season the salmon. Place salmon in the center of baking sheet. Season it with salt and pepper.
- Drizzle with butter and herbs. In bowl, mix butter, lemon juice and herbs. Pour over salmon.
- Seal. Fold the sides of foil over the salmon and seal it. Bake for 18-20 minutes.
- Broil. Remove from oven and open foil. Put back in oven and broil on high until it gets a little colour (about 2 minutes). Keep your eye on it to ensure it doesn’t burn.
- Serve. Remove from oven and serve. Be sure to spoon over the remaining sauce over the fish.
Storing and reheating
Once cooled, leftovers can be placed in an airtight container and stored in the fridge.
To reheat them, place the salmon on a foil lined pan and reheat it in the oven at 350F.
