There is no better feeling than coming home to a delicious, prepared meal after a long day at work! On a busy weekday, a slow cooker is your best friend and this recipe is a winner in our house! Minimal work, healthy ingredients and a comforting meal!
I don’t know how I went without a slow cooker for so many years! It wasn’t until I borrowed my mom’s slow cooker one day that I got my first taste of what it could do. I kept that slow cooker for 2 more weeks and tried out some other delicious recipes too. After gushing about how helpful it was having dinner ready when I got home, my mom gifted it to me and it has been a superstar in our kitchen ever since!
What is not to love about having dinner ready when you get home? There is seriously nothing better!
It’s been fun experimenting with recipes and trying to modify my stovetop meals into slow cooked versions. Many of the recipes for slow cooked meals are loaded with canned ingredients and that is something we avoid in our home. This recipe is free of any canned, processed ingredients! A healthy, delicious meal is truly easy to achieve in your crockpot and I am eager for you to try it!
How to make Slow Cooker White Chicken Chili
To make this meal, you will need:
- 3 chicken breasts, boneless and skinless
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1 teaspoon oregano
- 3/4 teaspoon cumin
- salt and pepper
- 1/2 onion, finely diced
- 1 can chickpeas
- 2 small cans diced green chilis
- 2 cups corn kernels
- 4 cups chicken broth
- 4 oz cream cheese, cut into cubes
- 1/3 cup milk
Optional toppings:
- Tortilla chips
- sour cream
- shredded Monterey jack cheese
- cilantro
Season chicken with salt, pepper, chili powder, cumin, oregano and cayenne pepper. Place it on the bottom of the slow cooker.
Add chickpeas, green chilis, corn and broth. Cover and cook on low for 8 hours or on high for 4 hours.
Remove chicken and place it on a baking sheet. Shred it using two forks. Meanwhile, add the cream cheese and milk to the slow cooker and stir on high heat until the cheese has melted. Add the shredded chicken back into the slow cooker and stir to combine. Serve with optional toppings, if desired.

Why does the recipe call for both 3/4 t chili powder and 1/2 t chili powder?
Just a 1/2 teaspoon of chili powder is needed for the recipe. 🙂
