Sun-dried Tomato Pesto

This simple sun-dried tomato pesto is so easy to make and so incredibly flavourful! It is delicious served over chicken or pasta!

For the longest time, the only pesto I had ever tried was basil pesto. I absolutely love it but had never ventured out and tried other pesto before. Part of this is because I had never even heard of different types of pesto and it never occurred to me to make a different version at all.

Thankfully, I’ve since stepped into a whole new world of pesto possibilities! I’ve made so many different versions of pesto – mint pesto, spinach pesto, asparagus pesto, and the classic basil pesto, of course. Today I am sharing with you sun-dried tomato pesto!

I love them all, but I really love this sun-dried tomato pesto! Its delicious over chicken (so, so good with chicken, you guys!) and pasta too! I’m making myself hungry just thinking about it!

Wanna know the best part? Its so easy to do! And perfect (and affordable) year round! We always buy sun-dried tomatoes from the grocery store and there is a package or jar of them in our pantry at all times.

The rest of the ingredients are things we already have on hand and you probably do too. Nothing too fancy. Just olive oil, basil, Parmesan and salt and pepper. And if you don’t have all the ingredients on hand, you can make some simple swaps.

  • No fresh basil? Swap in dried instead (just use 1/4 teaspoon to start and add more to suit your tastes if you need to).
  • No Parmesan cheese or on a dairy-free diet? Leave it out and adjust the seasonings if needed. Or use a little nutritional yeast in its place.

How to make Sun-dried Tomato Pesto

This recipe is incredibly simple and comes together in mere minutes with the help of a food processor! To make it, you will need:

  • 1 cup sun-dried tomatoes
  • 1/4 cup olive oil
  • 3/4 cup basil
  • 1/2 cup Parmesan cheese
  • salt and pepper

To make the pesto, add all the ingredients in a food processor and process until you reach the desired consistency. Drizzle more olive oil and continue processing for a runnier pesto.
