Fresh vegetables and a light, Greek yogurt dressing make this Summer Salad with Greek Yogurt Lemon-Dill Dressing the perfect summer salad!

I am channeling my inner Elaine Benes with this BIG salad! It’s loaded with veggies, chicken feta and a delicious yogurt dressing and it was our delicious lunch today! Lots of fresh veggies starred in this dish, all of which were supplied by our garden or our parents! These are my favourite kind of summer meals!

It’s been too hot for too long and I had zero desire to turn on the stove today. We had leftover chicken souvlaki from last nights dinner and so, that was the protein in our salad today! Feel free to swap in your favourite protein or keep it vegetarian by replacing the chicken with boiled eggs instead!

I love the different seasons and especially love Fall, but you really can’t beat the veggies this time of year! Tomatoes, greens, radishes, zucchinis, eggplants, etc, etc, etc. All of the veggies! They are all in season, fresh and so flavourful! As much as I love having a steady supply of these veggies at our grocery stores year round, imported from all over the world, you can’t beat the fresh taste and flavour of local ingredients!

I feel fortunate that our local ingredients are plentiful and delicious, but especially grateful that I have the space to grow things in my own backyard! I can’t seem to keep indoor plants alive year round but we have always had luck with our summer garden!

How to make Summer Salad with Greek Yogurt Lemon-Dill Dressing

To make this salad, I used:

For the salad

  • 4 cups spring mix
  • 2 radishes, sliced thinly
  • 2 large tomatoes, chopped
  • 3 tablespoons hemp seeds
  • 1/4 cup feta, crumbled
  • 2 chicken souvlaki, cooked

For the dressing

  • 3/4 cup plain Greek yogurt
  • juice of 1/2 a lemon
  • 1 tablespoon fresh dill, chopped
  • salt and pepper

To make the salad, I added all the salad ingredients in a large bowl. Then, in a small bowl, I combined the dressing ingredients and whisked it together until well combined. I drizzled the dressing on the salad and dug in!

Ingredients
  

For the salad

  • Add all salad ingredients in a large bowl.
  • In a small bowl, combine the dressing ingredients and whisk together until well combined.
  • Drizzle dressing on salad and serve.
