This Bran Muffins with bran flakes recipe is easy to make and uses a food processor to whip these up quickly! Bran cereal, Greek yogurt and whole wheat flour make these a healthy treat!
I love bran cereals and have done so since I was a kid. That makes me a weird kid, I know, but I have always gravitated towards healthier, plainer cereals. The sugar-loaded, cocoa flavoured, and marshmallow sprinkled ones never appealed to me.
As an adult, I still eat all the same cereals I did as a kid and we always have bran flakes on hand here, although I am the only one that actually eats it! The only way my husband consumes any of it is in these muffins and they are easily my favourite way to consume the cereal too!
Bran muffins are one of my favourite muffins and, luckily, my husband likes them too. He is also very health conscious and so the fact that these muffins are quite healthy for you helps!
I have tweaked my recipe for years trying to add more healthy elements to them without sacrificing any of the taste or texture I want. I am happy to have settled on the perfect balance and so excited to share it with you all today! The perfect amount of sweetness and enough fiber and protein to make me feel good about it. The perfect little healthy muffin!
How to make this Bran Muffins (with bran cereal) recipe
While many recipes for bran muffins use wheat bran, it is far too hard to find for me and, well, we already have bran flakes at home so using the cereal is so much better!
To make these muffins, you will need:
- 2 cups bran flakes cereal
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 3/4 cup brown sugar
- 2 teaspoons baking soda
- 1/2 teaspoon each cinnamon and salt
- 1/2 cup Greek yogurt
- 1/3 cup + 1 tablespoon vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons coarse sugar or turbinado sugar, for sprinkling
Preheat oven to 400F and line a muffin tray with muffin liners.
In a food processor, add the bran flakes and pulse to finely crush them. Add the flours, sugar, baking soda, salt and cinnamon and pulse to combine.
Add the yogurt, oil, eggs and vanilla extract to the food processor and pulse to combine.
Scoop the batter into the liners. Sprinkle the muffins with coarse or turbinado sugar.
Bake for 18 minutes or until a toothpick inserted into the center comes out clean. Transfer to a cooling rack to cool completely.
That is it! Serve with a pat of butter and enjoy!
