Summer patios and cocktails go together like pb & j. There is something about sitting out on our patio on a hot summer night that just begs for a cocktail in hand. Sitting back, listening to the birds chirp and enjoying some peace and quiet. That’s what summer nights are about!

This Grapefruit Gin Fizz is one of my favourite cocktails to make year round! Its simple, delicious, and uses up my favourite spirit- gin. We don’t drink very often but sometimes the occasion calls for it. And this perfect summer evening is one of those occasions!

Grapefruit juice has a nice citrusy tang. I personally like it, but if its a bit much for you, you can help offset that with a little added sweetness from extra simple syrup. You can also use storebought grapefruit juice which is less tangy (and sweeter) than juicing your own grapefruits.

How to make a Grapefruit and Thyme Gin Fizz

Gin fizz is a pretty simple cocktail to make. To start, you will need to make a simple syrup. If you haven’t made a simple syrup before, don’t worry, it’s called simple for a reason!

A traditional simple syrup is equal parts water and sugar that are heated up in a saucepan until the sugar dissolves (literally just minutes to do). You just let it cool and it is ready to use in cocktails!

In order to add more thyme flavour to this cocktail, I added thyme sprigs to the sugar and water while it was on the stove. This helps to infuse some thyme flavour into the cocktail which is so nice! Pick out the thyme sprigs (or strain it) and you’ve got yourself a fancy simple syrup. Easy, right? You can do this with just about any herb and many fruits as well to help infuse more flavour into cocktails.

I usually make more simple syrup than I need for just a couple of cocktails. It can be stored in the fridge and used again the next time I need it.

What you’ll need

To make this cocktail, you will need:

  • 1 ounce grapefruit juice
  • 1 ounce gin
  • juice of 1/4 lime
  • 1 tablespoons thyme simple syrup* (see below for recipe)
  • 3 ounces club soda
  • thyme sprig, for garnish (optional)
  • grapefruit segment for garnish (optional)

What to do

To make it, you will need a cocktail shaker (or a container with a secure lid). Fill the shaker with some ice and add the grapefruit juice, gin, line juice, and thyme simple syrup. Secure the lid and shake it to combine. Then strain it into a glass filled with ice. Top with the club soda and garnish with a sprig of thyme and grapefruit segment, if desired.

The recipe above is for 1 cocktail so if you are serving for a crowd, just multiply the ingredients by the number of guests.

Ingredients
  

Cocktail ingredients (per cocktail)

  • 1 ounce grapefruit juice
  • 1 ounce gin
  • juice of 1/4 lime
  • 1 tablespoons thyme simple syrup* (see below for recipe)
  • 3 ounces club soda
  • thyme sprig, for garnish (optional)

Thyme simple syrup

  • 3/4 cup water
  • 3/4 cup sugar
  • 8 sprigs fresh thyme

Instructions
 

  • In a saucepan, add all of the ingredients for the thyme simple syrup. Simmer over medium heat for a couple of minutes,until sugar dissolves. Strain and let cool.
  • To make 1 cocktail, add the grapefruit juice, gin, lime juice, and simple syrup to a cocktail shaker filled with ice and shake. Strain into a glass filled with ice. Top with club soda and garnish with a thyme sprig. Serve.
