Lightened Up Tuscan Shrimp

This Lightened Up Tuscan Shrimp recipe is made without cream for a healthier version of the classic comfort dish. Serve with veggies or over pasta for a delicious meal that is ready in just 15 minutes!

I love creamy dishes and I love shrimp so when the two come together, you know its going to be good night in our house!

Creamy Tuscan shrimp (or chicken or sausage) dishes are among my favourites! The creamy texture, paired with fresh spinach and sun-dried tomatoes is just too delicious to pass up. The entire dish is also pretty darn easy to make too.

From start to finish, this dish takes just 15 minutes. Yup, 15 minutes is all you need to get this delicious creamy shrimp dish ready to go.

That is basically all the time you need to also boil some pasta to serve it over too! Serving these creamy shrimp over pasta is my favourite way to enjoy them (the cream sauce just begs to be served over pasta). But if you want to keep this low-carb too, you can serve it alongside some roasted or sauteed veggies too.

Ingredients in Lightened Up Tuscan Shrimp

  • Shrimp (large size)
  • Olive oil
  • Flour
  • Milk
  • Baby spinach
  • Basil
  • Sun-dried tomatoes
  • Parmesan cheese
  • Italian seasoning
  • Salt and pepper

How to make this healthier creamy shrimp dish:

  1. Heat 1 tablespoon olive oil in a saute pan and add shrimp. Cook on both sides for a few minutes, until cooked through. Remove from pan and set aside.
  2. Add remaining oil to the pan and add flour. Stir to create a roux. Add milk and stir until it begins to thicken.
  3. Add the Italian seasoning, spinach, basil, and sun-dried tomatoes. Simmer for a few minutes. Stir in Parmesan cheese. Add shrimp and simmer for a couple minutes. Serve over pasta.

What can you serve with Lightened Up Tuscan Shrimp

  • over pasta with a side salad (my favourite way to enjoy this!)
  • over cauliflower rice (a great low-carb option)
  • with zoodles (another great low-carb option)
  • served alongside roasted vegetables and potatoes
  • with sauteed veggies and a side of crusty bread to soak up that sauce!
