Sweet Potato Bread

This easy, delicious Sweet Potato Bread recipe comes together in one bowl! The result is a moist, tender loaf that makes a perfect breakfast or dessert!

If you have not tried sweet potato bread before, I think I know what you’re thinking. Sweet potatoes in bread? What is this girl thinking? It doesn’t sound like a combination that many would put together. If it works in sweet potato pie, it surely can work here and it does! Well. No, really well!

This quick bread has quickly become a favourite around here! It gives off cozy vibes, with its warm spices and all! It’s like pumpkin bread, without the need for an expensive can of pumpkin (why is it never on sale these days??) And that’s actually what prompted me to make it in the first place! I had a deep craving for pumpkin bread but had no pumpkin and so I used the next best thing! And I loved it and just had to share it with you all!

Sweet potatoes are something we always have on hand. They’re absolutely delicious and so versatile, we use them in our meals often. Except they are usually playing the sidekick role on our plates (even though they usually outshine the main!) Here, though, it is front and center and in a dessert for a change! Gotta keep things interesting, right?

Overall, this bread is actually kinda healthy too! Okay, sure it has sugar and all, but with the use of Greek yogurt and sweet potatoes, there is nutritious value to this dessert that you can’t get out of a pound cake. That’s what I am telling myself anyway, cause I may or may not have eaten more than one slice! Ha!

Did I mention to you that this is also super easy to make and can be done in one bowl? Yup! Another reason to make this loaf, asap!

How to mash sweet potato for this sweet potato bread

I made this loaf using 1 1/2 cups of mashed sweet potato which is about 2 medium sized sweet potatoes. To mash them, I followed the following steps:

  1. Peel and chop 2 medium sweet potatoes.
  2. Boil them until tender.
  3. Puree them in a food processor.

If you have leftover sweet potatoes from a meal, feel free to use those too. You can also use other cooking methods like microwaving them or baking them if you like.

Before using them in this bread, I recommend giving them some time to cool to room temperature.

Wet ingredients

  • Sweet potato
  • Eggs
  • Butter or coconut oil, melted
  • Greek yogurt
  • Vanilla extract
  • All purpose flour
  • Sugar
  • Brown sugar
  • Baking soda
  • Spices: pumpkin spice, cinnamon, salt

How to make Sweet Potato Bread

  1. Preheat oven to 350F and line a loaf pan with parchment paper or grease it generously with butter.

  2. In a large bowl, add the wet ingredients and mix to combine. Add the dry ingredients and mix well to form batter.

  3. Transfer to the loaf pan and use a spatula to spread the batter evenly. Bake for 50-60 minutes or until a toothpick inserted in the center of the loaf comes out clean.

  4. Let it cool for 5 minutes in the pan, then remove bread and transfer to a cooling rack to cool completely before slicing.

How to store your sweet potato bread

In order to preserve sweet potato bread, place the cooled loaf in a container or cover it with plastic food wrap and store it in the fridge. You can warm up a slice by popping it in the microwave for a bit until it is warmed through again (I highly recommend doing this! A warm slice with a pat of butter is so good!)

Sweet potato bread is also great for freezing! Once cooled completely, wrap the loaf in plastic food wrap and then place the loaf in a freezer safe bag. You can also wrap and freeze individual slices for an easy treat without the need to thaw an entire loaf!
