Like most people, when the holidays roll around, I immediately start dreaming of all the delicious goodies that come with it. Gingerbread Lattes and Gingerbread Cookies are at the top of my holiday must-have list every year and there isn’t much that can deter me from indulging in these treats every winter.
I shared my recipe for homemade gingerbread syrup years ago in my Starbucks copycat Gingerbread Latte Recipe but decided to share it separately here because there are so many ways to use this delicious syrup in your kitchen! It felt wrong to only highlight its use in only one (albeit delicious and always on repeat in our household) latte recipe.
This gingerbread simple syrup recipe is wonderful in a wide variety of drinks, both hot and cold. Add some syrup to your favorite teas, to a steaming cup of hot chocolate, or in your cocktail and mocktail recipes and you have an instantly festive drink to get you in the holiday spirit.
It’s uses go beyond drinks too. Pour some syrup on your pancakes, waffles, or french toast for a delicious gingerbread flavor or drizzle it over ice cream.

Ingredients for Gingerbread Syrup
- Brown sugar: Used in equal parts with water to create the simple syrup. You can use light brown sugar or dark brown sugar. Dark brown sugar is made with more molasses and so will give you a deeper flavor but either can be used.
- Molasses: Adds to the gingerbread flavoring of this syrup.
- Spices: Ground ginger, ground cinnamon, and ground nutmeg.
- Vanilla extract: adds flavor.

How to make Gingerbread Syrup
- Simmer ingredients. In a small saucepan over medium heat, add all of the syrup ingredients except the vanilla extract. Simmer together for 5-7 minutes, whisking often.
- Whisk in vanilla extract. Remove from heat and whisk in the vanilla. Let it cool.
- Cool and store. Once cooled, run it through a sieve and transfer to a mason jar or other container. Store in the fridge.
Storing gingerbread syrup
Once it is cooled, place the gingerbread syrup in a jar with a secure lid or a similar airtight container and store it in the fridge. It can keep for a couple of weeks if stored properly.
Uses for Gingerbread Syrup
This flavored simple syrup can be used in a wide variety of ways, as mentioned above. Our favorites include:
- Coffee. Adding this flavored syrup to your regular brewed coffee in place of sugar or making a delicious Gingerbread Latte Recipe is our favorite way to use this syrup.
- Other hot drinks like teas and hot chocolates. While you could add it to a powdered hot chocolate mix, I prefer making Homemade Hot Chocolate because I can omit the sugar altogether and replace it with as much gingerbread simple syrup as I desire to make a more flavorful drink without it getting overly sweet.
- Cocktails or mocktails. Simple syrups are often used in cocktail recipes and there are no rules against using a flavored simple syrup in place of an ordinary syrup. Have fun adding a gingerbread twist to all your favorite drinks.
- Drizzled over pancakes, waffles, or french toast. This is such a fun way to add a holiday twist to your brunch or breakfast table.
- Spooned over ice cream. Such a fun way to add some gingerbread flavor to your ice cream treat.
- Brushed onto cakes. Add a little gingerbread flavor to your cakes and cupcakes.

Gingerbread Syrup Recipe
Ingredients
- 1 cup water
- 1 cup brown sugar
- 6 tablespoons molasses
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 teaspoons vanilla extract
Instructions
- In a small saucepan over medium heat, add all of the syrup ingredients except the vanilla extract. Simmer together for 5-7 minutes, whisking often. Remove from heat and whisk in the vanilla. Let it cool.
