This Hawaiian chicken recipe is finger-licking good all thanks to a delicious sauce/marinade flavoured with pineapple juice, soy sauce, brown sugar, and ginger. Its savory and sweet (and I love a good salty-sweet combo!), but most of all, its amazing!

How to make Grilled Huli Huli Chicken
This recipe is simple to do! To make it, you will need:
- 2 lbs chicken thighs or breasts, boneless and skinless
- 1/2 cup pineapple juice
- 1/3 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup chicken broth
- 2 tablespoons ketchup
- 1 teaspoon ginger, grated
- green onions, sliced for garnish
- pineapple, sliced for serving
To start, in a bowl, I mix pineapple juice, brown sugar, soy sauce, chicken broth, ketchup and ginger. I reserve half of the sauce (to be used for basting and serving).
With the other half of the marinade, I place it in a ziplock with the chicken and place it in the fridge to marinade for at least 2 hours.
When i’m ready to cook, I (or more likely my husband) grill the chicken for approximately 6-8 minutes on each side or until the chicken is cooked through. I remove it from the grill and then baste the chicken with the reserved sauce. Every last drop of it, cause that sauce is gold!
To serve, I garnish with green onions and serve with sliced pineapple (you can also grill the pineapple slices for a couple minutes if you like which I recommend). If you have basting sauce left over, drizzle some over the chicken before serving.
That’s it! Serve with rice (I like it with coconut rice) and your favourite greens).
