Healthy Peanut Butter Chocolate Chip Cookie Dough

This Healthy Peanut Butter Chocolate Chip Cookie Dough recipe is a dairy free cookie dough that’s a cross between a peanut butter cookie and chocolate chip cookie. Dig into this edible cookie dough with a spoon or roll them into cookie dough bites! This recipe can easily made gluten-free and vegan too.

As tempting as it is to eat raw cookie dough before you pop those cookies in the oven, the fear of salmonella food poisoning is enough to deter anyone. Between the raw eggs and the raw flour, it just isn’t safe to pop a bite of regular cookie dough into your mouth anymore. That’s why I love recipes like this edible cookie dough!

Healthy Peanut Butter Chocolate Chip Cookie Dough is made without any raw eggs or raw flour. This dairy free recipe is safer to eat and with the wholesome ingredients I use, its healthy too. It can also be easily made into a gluten-free cookie dough or the best vegan cookie dough you can get using unprocessed, simple ingredients.

There is also no refined sugar in this easy recipe (I use honey or maple syrup instead). There is no butter (peanut butter is used instead). It’s also made with a homemade oat flour. You could use a store-bought oat flour or even all purpose flour too but you will need to heat treat it to make it safe to eat (tips below).

The end result is a tasty dessert that can be enjoyed with a spoon, rolled into cookie dough bites, or used in a wide variety of desserts.

Other ways to use this edible cookie dough

There are so many ways to use this dairy-free cookie dough too!

Roll them into smaller cookie dough bits and add them to an ice cream base to make a homemade chocolate chip cookie dough ice cream. You can also make them into a vegan cookie dough ice cream by using a vegan ice cream made from coconut milk or similar.

In addition to ice cream, you can add them to brownies, use it in a no-bake cheesecake (both sprinkled in the cheesecake layer and used as the base layer), or use them in cupcakes.

Ingredients in Healthy Peanut Butter Chocolate Chip Cookie Dough

  • Flour: oat flour that is made my pulsing rolled oats in a food processor until it is turned into a flour. Alternatively, if you use a store-bought oat flour you can heat treat it to make it safe to use in this raw dough. You can use all purpose flour too but will also need to heat treat it.

  • Peanut butter: This healthier cookie dough recipe uses peanut butter instead of butter. This helps keep it dairy-free (without using a processed vegan butter), adds delicious peanut butter flavor, and also adds protein to this recipe.

  • Mini chocolate chips: use dairy free, vegan chocolate chips to keep this recipe vegan and dairy free.

  • Honey or maple syrup: Instead of using refined sugar like granulated sugar or light brown sugar, use maple syrup for a vegan edible cookie dough).

  • Olive oil: or another cooking oil like vegetable oil.

  • Vanilla extract

  • Salt

How to heat treat flour

If you make your own oat flour for this recipe using rolled oats, you can skip the heat treating of it. Rolled oats are essentially already heat treated since they have been heated during processing. I just add my rolled oats into a food processor and blitz them until they are a fine flour.

If you wish to use a store-bought oat flour or even all purpose flour, you will need to heat treat the flour to make sure it is free from harmful bacteria and safe to eat. There are two ways you can do this.

Oven method: To heat treat flour in the oven, place it on a baking sheet lined with parchment paper and bake it in a preheated oven at 350F for about 8-10 minutes or until it reaches a temperature of 165F. To take the temperature, you can make a small pile of flour to insert the cooking thermometer into the center of. Then, sift the heat-treated flour and allow it to cool before using.

Microwave: For the microwave method, place the flour in a microwave-safe bowl and heat it in 30 second intervals. Stir between intervals, until it reaches a temperature of 165F.

How to make Healthy Peanut Butter Chocolate Chip Cookie Dough

  1. Prepare the flour. Place the rolled oats into a food processor a pulse them until they become a fine oat flour. Note: If you prefer to use store-bought oat flour or all purpose flour, see my “How to Heat Treat Flour” section above to see how to safely heat treat the flour for use.

  2. Mix all of the ingredients together. Place the homemade oat flour in a large mixing bowl along with all the other ingredients. Mix them well to combine them.

  3. Scoop, roll, and store. Scoop the dough into ramekins or, alternatively, form them into small balls (I like to use a cookie scoop to make them uniform). Refrigerate the dough until ready to enjoy.

Storage and freezing edible cookie dough

Cookie dough should be stored in an airtight container in the fridge for about 4 days. I like to portion it out into ramekins (and cover them with plastic wrap) or roll it out into dough balls. This way, I can easily pick up one portion and enjoy it when I want a sweet treat. If you prefer to eat the dough at room temperature, you can let it sit out for a bit before digging in.

Can you freeze edible cookie dough?

For longer storage, I recommend freezing this edible cookie dough. To freeze, roll the dough into balls and then place them on a parchment lined baking sheet. Freeze them for a few hours until solid. Once frozen, I transfer the dough balls into a freezer bag. This prevents the soft dough from clumping together so you can easily thaw one cookie bite.
