Cherry Tomato Frittata

Cheese, eggs and perfect little cherry tomatoes come together to make a delicious, healthy breakfast! Cherry Tomato Frittata is easy to make and quick too, making for an easy addition to your breakfast table!

Tomatoes are one of my favourite veggies (actually a fruit but it seems strange to call it one..) and cherry tomatoes make their way into our meals and snacks all the time. Whether we sprinkle them into dishes like my Caprese Pasta Bake or we make them the star of the show like in my Cherry Tomato Caprese Salad, we’ll find any excuse to use these delicious little red jewels.

We plant several cherry tomato plants in our garden every summer and are sure to pick up a pint on every grocery trip every other season of the year!

I love a good frittata and one that includes delicious cherry tomatoes is right up my alley! If you are not including cherry tomatoes in your breakfasts, this recipe will help you rectify that right now! Its incredibly easy, healthy and flavorful! What else can you ask for from your breakfast?

Ingredients for Cherry Tomato Frittata

  • Cherry tomatoes: I use about 2 1/2 cups worth of cherry tomatoes. I like to make an even layer on the bottom of my skillet so you can adjust the amount depending on the size of your skillet.

  • Olive oil: Used to toss the cherry tomatoes in and to grease the bottom of the skillet.

  • Eggs: 6 eggs is enough to make a thick enough frittata that covers most but not all of the cherry tomatoes. I like for them to show through.

  • Cheeses: I use a mix of Parmesan cheese and mozzarella cheese. The shredded cheeses go right into the egg mixture and add delicious flavor. If you like to see little pools of cheese on top of the frittata, I like adding a few slices of mozzarella on top of the frittata before I pop it in the oven.

  • Fresh basil: finely slices or julienned.

  • Seasoning: salt and pepper.

How to make Cherry Tomato Frittata

  1. Whisk together the egg mixture. In a bowl, add the eggs, cheeses, basil, salt and pepper. Whisk together.

  2. Lightly saute the cherry tomatoes. Heat olive oil in an oven-safe skillet over medium heat. Add the cherry tomatoes and toss for 1 minute.

  3. Add the egg mixture to the tomatoes. Add the egg and cheese mixture and let it cook on medium heat until the edges begin to set (about 4-5 minutes).

  4. Bake. Place the skillet in the preheated oven and cook for approximately 7 minutes or until the frittata has set. Remove the frittata from the oven and let cool a few minutes before slicing and serving.

Storing leftovers and reheating

Leftover frittata can be cooled completely and placed in an airtight container in the fridge.

To reheat the frittata, you can place your slices onto a lightly greased or parchment lined baking sheet and pop it in the oven to warm it through. Alternatively, you can heat it in a microwave for a quick weekday breakfast.

What to serve with frittata

This frittata is great on its own or can be added to a larger brunch spread. Serving it alongside toast or biscuits is one of my favorite ways to enjoy it.
