Cherry Tomato Frittata

I love a good frittata and one that includes delicious cherry tomatoes is right up my alley! Tomatoes are one of my favourite veggies (actually a fruit but it seems strange to call it one..) and cherry tomatoes make their way into our meals and snacks all the time. We plant several cherry tomato plants in our garden every summer and are sure to pick up a pint on every grocery trip every other season of the year!

If you are not including cherry tomatoes in your breakfasts, this recipe will help you rectify that right now! Its incredibly easy, healthy and flavourful! What else can you ask for from your breakfast?

How to make Cherry Tomato Frittata

To make this super easy, delicious frittata, you will need:

  • 2-3 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 6 eggs
  • 2 tablespoons Parmesan cheese
  • 1/4 cup mozzarella cheese, shredded
  • 1 tablespoon fresh basil, finely sliced
  • salt and pepper

Preheat oven to 375F. In a bowl, add eggs, cheeses, basil, salt and pepper. Whisk together.

Heat olive oil in an oven-safe skillet over medium heat. Add the cherry tomatoes and stir for 1 minute. Add the egg and cheese mixture. Let cook on medium heat until the edges begin to set (about 4-5 minutes). Place skillet in the oven and cook for approximately 7 minutes or until the frittata has set.

Remove from the oven and let cool a few minutes before slicing and serving.
